At least set auto update to off, wait a while and watch everyone else get in hot water, then make you decisions and action which to omit / install.

Yep, that's exactly what I have been doing for awhile now.

I remember eagerly awaiting updates/service packs to see what new and exciting stuff was done to Media Center. MCE 2005 rollup 2 anyone? Ah......the good old days!

Wow, that's when I started this journey!

I've had updates set to auto ever since then. After an unfortunate incident when an ATI driver was updated on me, I only install critical updates which means I've got a massive list of recommended ones sat begging for my attention.

I've had Windows Update set to manual on my dedicated HTPC since day one (only about 1.5 years now). I apply the updates about a week or so after I am notified that they exist, but only after I check this forum for any complaints. It served me well this time...

Since it is a dedicated HTPC, and I don't use it for web surfing or anything like that, I don't think delaying the update is much of a risk. In most cases, even if it is a general use PC, delaying the update should not increase your exposure to any security issues by very much (unless you have a habit of visiting high risk sites on the web, or use your PC on a network without a dedicated firewall).
