What does EPG123 use to lookup metadata?

Is it like MMC, where it gets bundled with something like YAMM, or is it built into the software itself?

All the guide information that is presented comes from SD/Gracenote. I use tmdb for any missing movie poster art, and use tvdb for the transition tool to convert a Rovi series ID to a Gracenote series ID.

There are no external sources for the metadata other than SD/Gracenote.

Does epg123 (and WMC in general) embed metdata in wtv files

WMC does, but not all. You won't get character names, image links, season/episode numbers, ...?

Sorry. I'm trying to figure out if YAMM is even doing anything for me. EPG123 doesn't create any xml files (DVDID.xml Specifically), and it stores everything inside of the WTV file, correct? If so, I think I can delete a lot of my metadata files. I just want to make sure WMC is giong to be able to read everything. YAMM might actually be making metadata worse on my machines.

I suggest you take a look at this tool which can show you all the metadata fields of a WTV and DRVMS file.

BTW, EPG123 doesn't do anything to or with WTV files. Its only purpose (and one that it does exceedingly well) is to push listing data into WMC (and channel images).

So when a new recording is created, EPG123 just connects WMC to a new metadata provider, and WMC itself puts tags into WTV files?

Basically, yes. EPG123 pulls listing data from SchedulesDirect and loads it into WMC which stores it locally. When WMC needs metadata, it gets the data from its internal storage (and that data came from SchedulesDirect--via EPG123--instead of Rovi).

And when I move said recording to a server for instance another WMC machine should be able to read all of the metadata, right?

If it's the same version of WMC, I should think so (because the stored metadata doesn't depend on a particular source).
