This should work correct? Doesn't have to be a Ceton tuner?

Well, you have to be running Windows Media Center somewhere since, like Xbox, Echo is a Windows Media Center Extender. But, yes, any tuner that works with WMC, you'll be able to view on the Echo.

There was I time I was running five Echoes, a Prime and a Ceton all at the same time.

Cool, just wanted to make sure. Gonna add a prime, already have a ceton tuner and echo
