Advice on ripping Blu-ray library to HDD

I'm finally getting my network bottlenecks worked out and have invested in a dedicated PC for WMC so I have lots of questions. This thread will deal with how to best utilize my hardware for ripping blu-rays, DVDs, and CDs for playback in WMC and my Xbox 360 extender. In addition to the 360 I have two PCs, a slower dedicated WMC and a faster PC for my everyday use. The two PCs are connected to my internet router via gigabit ethernet and the 360 connects to the internet router via 300N WiFi (until I finish running gigabit ethernet). I have a PX-B310U that can be attached to either PC. The specs of both PCs are below. Given my setup, what software is best, and should I simply run it all on the velociraptor and then move the finished movies to the WD40EZRX, or something different?
