Greetings! Not a pro with AV stuff, but trying to help the boss out with his video game store. He wants to demo our game systems on the TVs throughout the store. We've been reading about HDMI extenders and found out about the newest solutions HDMI over IP, where you can use your internet to extend the signal. Found some online https://bzbexpress.com/Video-Over-IP/ and on Amazon, but have no clue about any of these brands. Would hdmi over ip be our best option or can we just use "regular" extenders? Thanks for the advice!

Yep, HDMI over IP is the way to go. Forget about running HDMI cables all over the place; it's expensive and HDMI is not reliable over long distances. Running CAT5e/CAT6 is cheaper, easier to work with, and more reliable.

What you need is called a "Matrix Switcher". You will have to do your own research, but here is an example. I suggest perusing AVSForum.com. There are many knowledgeable members there that can guide you as well.
